1 Minute Blueberry Pop-Tart Mug Cake Recipe

- for cake:
- 1½ tbsp unsalted butter, melted
- 2½ tbsp almond milk
- 1 tbsp granulated sugar
- 1 tbsp powdered sugar
- 4 tbsp all purpose flour
- ¼ tsp baking powder
- ¼ tsp blueberry jam
- for icing:
- ¾ tsp lemon juice
- 3 tbsp powdered sugar
- food coloring, optional
- for toppings:
- sprinkles
In microwavable mug combine the butter, milk, sugars, flour, & baking powder. Stir to combine. Using the back of your spoon form a hole in the center of the batter & place the jam inside of the hole. Lightly spoon the batter over the jam so that it is completely covered. Place in microwave for 45-50 seconds.
While the cake is cooking, combine icing ingredients in a separate bowl.
Let cake cool for 1-2 minutes & then spoon icing over the top. For the full pop-tart effect leave a border of cake around the sides. Immediately top with sprinkles, serve, & enjoy!
