1 Minute Blueberry Pop-Tart Mug Cake Recipe

Ingredients

  • for cake:
  • 1½ tbsp unsalted butter, melted
  • 2½ tbsp almond milk
  • 1 tbsp granulated sugar
  • 1 tbsp powdered sugar
  • 4 tbsp all purpose flour
  • ¼ tsp baking powder
  • ¼ tsp blueberry jam
  • for icing:
  • ¾ tsp lemon juice
  • 3 tbsp powdered sugar
  • food coloring, optional
  • for toppings:
  • sprinkles

Instructions

  • In microwavable mug combine the butter, milk, sugars, flour, & baking powder. Stir to combine. Using the back of your spoon form a hole in the center of the batter & place the jam inside of the hole. Lightly spoon the batter over the jam so that it is completely covered. Place in microwave for 45-50 seconds.
  • While the cake is cooking, combine icing ingredients in a separate bowl.
  • Let cake cool for 1-2 minutes & then spoon icing over the top. For the full pop-tart effect leave a border of cake around the sides. Immediately top with sprinkles, serve, & enjoy!
