Pop-tarts have long been one of our favorite treats. Once we mastered the regular pop-tart recipe (which is anything but “regular”) we decided to make it into any other type of dessert we could think of: cereal, cake, holiday themed, s’mores, breakfast flavored, the list goes on & on. Today we’re thrilled to unveil our latest pop-tart creation, the pop-tart mug cake recipe! It’s beyond delicious, takes only 1 minute to make, & is a the perfect hybrid between cake & a pop-tart. Pop-tarts are known to come in a wide variety of flavors & this mug cake can totally be made into any of those: cookie dough (fill the center with some & then top with a hot fudge), strawberry (swap out the blueberry jam for strawberry jam), brown sugar cinnamon (fill the center with 1/2 tsp brown sugar & 1/4 tsp cinnamon then top with icing made from powdered sugar, vanilla, & a pinch of cinnamon). 1 Minute Blueberry Pop-Tart Mug Cake Recipe
Ingredients
- for cake:
- 1½ tbsp unsalted butter, melted
- 2½ tbsp almond milk
- 1 tbsp granulated sugar
- 1 tbsp powdered sugar
- 4 tbsp all purpose flour
- ¼ tsp baking powder
- ¼ tsp blueberry jam
- for icing:
- ¾ tsp lemon juice
- 3 tbsp powdered sugar
- food coloring, optional
- for toppings:
- sprinkles
Instructions
- In microwavable mug combine the butter, milk, sugars, flour, & baking powder. Stir to combine. Using the back of your spoon form a hole in the center of the batter & place the jam inside of the hole. Lightly spoon the batter over the jam so that it is completely covered. Place in microwave for 45-50 seconds.
- While the cake is cooking, combine icing ingredients in a separate bowl.
- Let cake cool for 1-2 minutes & then spoon icing over the top. For the full pop-tart effect leave a border of cake around the sides. Immediately top with sprinkles, serve, & enjoy!
