Better-For-You Copycat Lil Frankie's Spaghetti Limone

- 8 oz Chickapea spaghetti
- 6 oz coconut cream
- 1½ lemons, juiced
- 5 tbsp vegan butter
- ¾ cup parmesan cheese, grated
- pinch of ground black pepper
- pinch of sea salt
- optional: lemon zest
In large pot, bring water to a boil. Add in pasta & cook according to the packages instructions.
In large saucepan combine coconut cream & lemon juice over medium heat. Bring to a boil & immediately reduce to a simmer.
Add in the butter & stir until it has melted into the cream & juice.
Pour in the parmesan cheese & stir until combined. Add in salt & pepper.
Pour sauce over strained pasta & top with more cheese & lemon zest. Enjoy!
