Better-For-You Copycat Lil Frankie's Spaghetti Limone

Ingredients

  • 8 oz Chickapea spaghetti
  • 6 oz coconut cream
  • 1½ lemons, juiced
  • 5 tbsp vegan butter
  • ¾ cup parmesan cheese, grated
  • pinch of ground black pepper
  • pinch of sea salt
  • optional: lemon zest

Instructions

  • In large pot, bring water to a boil. Add in pasta & cook according to the packages instructions.
  • In large saucepan combine coconut cream & lemon juice over medium heat. Bring to a boil & immediately reduce to a simmer.
  • Add in the butter & stir until it has melted into the cream & juice.
  • Pour in the parmesan cheese & stir until combined. Add in salt & pepper.
  • Pour sauce over strained pasta & top with more cheese & lemon zest. Enjoy!
