Preheat oven to 345 F.
In large mixing bowl, combine all cupcake ingredients & mix until smooth. Pour into sprayed mini springform pans until ¾ way full.
Bake 24 minutes or until toothpick is inserted & comes out clean. Remove sides of pan (keep bottom on) & let cool completely.
In medium mixing bowl, combine all frosting ingredients. Stir to combine.
Once cakes have cooled, cover entirely in frosting using offset spatula. *Don't worry about it looking too pretty, the sprinkles will cover it entirely!
Place parchment paper on top of cake. Pour sprinkles in parchment paper lined baking tray. Holding one hand on top of the parchment paper & the other flat on the bottom of the springform pan, roll the sides of the cake in the sprinkles. Place it down on springform pan side & pat sides to even out.
Spoon remaining sprinkles on top of cake to cover completely. Serve & enjoy!
