Some nights you just need to crawl into bed early with a glass of wine in one hand & some cake in the other. If you must know, yes, by some nights I mean every night. So in order to hide all evidence of this in the morning, I’ve created the perfect mini cake recipe for you. It’s delicious, portioned for one person, & most importantly it’s covered in sprinkles. Using the recipe from our Copycat Molly’s Cupcake Recipe, I poured the batter into mini springform pans, slathered on a bunch of frosting, & topped it with those sprinkles I keep drooling talking about.
The frosting recipe is beyond basic & truthfully tastes like something you’d get at a legit bakery. I’d say it would wow your friends but let’s be real, you’re not sharing any of this cake.
- for the cake:
- ½ cup salted butter
- 1 cup granulated sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 cup flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup sour cream
- 1 cup funfetti cake mix
- ¾ cup buttermilk
- sprinkles & tons of them!
- for the frosting:
- 1 stick salted butter
- 2 tbsp buttermilk
- 1½ tsp vanilla extract
- 2 cups powdered sugar
- for the toppings:
- non-pareils
- Preheat oven to 345 F.
- In large mixing bowl, combine all cupcake ingredients & mix until smooth. Pour into sprayed mini springform pans until ¾ way full.
- Bake 24 minutes or until toothpick is inserted & comes out clean. Remove sides of pan (keep bottom on) & let cool completely.
- In medium mixing bowl, combine all frosting ingredients. Stir to combine.
- Once cakes have cooled, cover entirely in frosting using offset spatula. *Don't worry about it looking too pretty, the sprinkles will cover it entirely!
- Place parchment paper on top of cake. Pour sprinkles in parchment paper lined baking tray. Holding one hand on top of the parchment paper & the other flat on the bottom of the springform pan, roll the sides of the cake in the sprinkles. Place it down on springform pan side & pat sides to even out.
- Spoon remaining sprinkles on top of cake to cover completely. Serve & enjoy!

Hi Angelica! You can definitely make it as one large cake! Make sure your large springform won’t leak the batter through however. Also, it may be a bit more difficult to cover in sprinkles if it’s much larger but definitely still possible 🙂 enjoy! xo
