When I crave something, I crave something. Although advised otherwise, I typically give into the cravings. I know, I know I sound like a 9 month pregnant woman (no, no I’m not) but I just can’t help it! So when I wanted goat cheese last week I told myself, “don’t just sit there & eat it on a cracker, do something with it!” Boy am I glad I did.
If there’s ever a recipe I now create over & over again, this is it. This filling & delicious treat is perfect for both dinner parties & everyday snacking. Not to mention, it’s fairly simple to make. The hardest part is definitely working with the fillo dough. It’s extremely flakey yet the more you make these the more comfortable you get working with it. Plus a little butter brushed on it acts as your glue to keep the pastry together.
Goat Cheese Pastry
Ingredients
- 4oz goat cheese, crumbled
- honey
- 1 package fillo pastry
- 1 package fresh thyme
- 1 stick butter, melted
Instructions
- Cut fillo pastry into 8 x 6 in. pieces. Place one sheet on baking tray, brush with butter & place second sheet on top. Repeat until you have stacked 4 fillo sheets. Preheat oven to 350 F.
- Spread crumbled goat cheese in straight line across fillo pastry leaving 1 in. on each end. Sprinkle leaves from 2 sticks of thyme over cheese. Lightly drizzle honey over cheese & thyme.
- Roll pastry into cigar shape as if you were rolling a burrito, tucking the ends in after the first roll. Brush entire pastry with butter & repeat until you have used all your ingredients.
- Bake for 25-30 minutes or until lightly golden. Let cool for 5 minutes. Drizzle with more honey & sprinkle with thyme. Serve & enjoy!
