As we head into the holiday weekend we’re likely to be surrounded by tons of BBQ, naps (hopefully on the beach…), friends & family. Pretty ideal weekend, right? We think so! Aside from the fact that by the end of it we usually feel like a total blob. No workouts, tons of unhealthy food, & a major case of the Monday Scaries. Thankfully we’ve created this recipe for both you & us that will help to keep everyone on track while still enjoying the weekend & indulging. These super easy Garlic Parmesan Sweet Potato Chips are so delicious & a much better-for-you snack option. Whip up a batch for whatever plans you have this weekend & you’ll totally thank yourself later!
- 2 sweet potatoes, sliced thin (roughly ¼ inch)
- minced garlic
- parmesan cheese
- Preheat oven to 400F. Line baking tray with tin foil & put sweet potato slices side by side on tray. Bake for 30-40 minutes or until soft. Remove from oven & sprinkle with garlic & cheese. Place back in oven for 5 minutes or until toppings begin to get golden brown. Serve & enjoy!
