When we can make a healthy treat taste like our favorite desserts, that’s the dream, people. When it takes just 1 step & barely any effort? Well, is there anything bigger than a dream…? After creating our cookie dough chia seed pudding recipe we knew we had to do more & who doesn’t love some good ‘ole strawberry cheesecake. The basis for this recipe was simple as we already knew how to create a chia seed pudding & naturally we thought to add in pureed strawberries. The cheesecake flavoring was a bit trickier however since most cheesecakes are made with cream cheese or ricotta cheese, both of which are not quite the healthiest options. After thinking of ways to keep it natural & on the healthier side we thought to try cottage cheese which much to our delight, worked perfectly! The consistency was similar to that of cheesecake & it added that creamy, cheesey flavoring that we all love so much. Since chia seed puddings typically falls under the breakfast category & cheesecake under dessert, you get to eat dessert for breakfast & breakfast for dessert! See people, livin’ the dream.
Healthy Strawberry Cheesecake Chia Seed Pudding Recipe
Ingredients
- ¼ cup chia seeds
- ⅓ cup cottage cheese
- 1 cup strawberries, blended
- ½ cup almond milk
- ½ tsp vanilla
- for toppings:
- fresh strawberries
Instructions
- In large mixing bowl combine all chia seed pudding ingredients. Top with Saran Wrap & place in fridge for at least 12 hours. Serve & enjoy!
