I tried a Perfect Bar at ExpoWest earlier this year & let me just say, I had hesitations as calling yourself “perfect” sets some pretty high expectations. This Peanut Butter Chocolate Chip Perfect Bar did NOT disappoint. I’ve probably had one for breakfast 4-5 days out of the week since then. Clearly I’m addicted to theseย perfect little bars & figured I should try to create them myself. What? You don’t think that anytime you like something? Weird… Anyway I was shocked when I threw this recipe together to find just how easy & similar in taste they turned out. Packed with protein, these bars are great for breakfast, on-the-go snacks, & ok fine I’ll admit, I even have ’em for dessert.

Serves: 9 bars
Ingredients
  • 1½ cup almond flour
  • ½ cup thin PB
  • ¼ cup almond milk
  • ⅓ cup honey
  • 2 pinches of sea salt
  • 1 tsp vanilla bean paste
  • 2 tbsp vanilla protein powder
  • ½-1 cup chocolate chips
Instructions
  1. In large mixing bowl combine peanut butter, almond milk, honey, & vanilla bean paste. Stir until well combined. Add in the remaining ingredients (sans chocolate chips) & stir until combined. Toss in the chocolate chips & stir to combine.
  2. Line 8x8 baking sheet with parchment paper. Pour mixture into the pan & press down until firmly packed in the pan. Place in the freezer for 1 hour. Move tray to the fridge & keep in there until ready to serve. Enjoy!

    Do you happen to have calorie counts for the bars if divided into 9? I usually eat half a perfect bar and save the rest for the next day. I’d be curious if I can count on it to be the same as a real one. Also where don’t get vanilla bean paste?

      Hi! Unfortunately we don’t have the calorie count as it would vary based on the ingredients used brands. As for vanilla bean paste, this one is a great one! You can find online & is most grocery stores ๐Ÿ™‚ It can also be swapped 1:1 with vanilla extract (we just find the paste is more flavorful!). Thanks for following along! xo

      Hi Linda! Thanks so much for reaching out! Thin just means a super smooth consistency. You want it to basically drip off the spoon if possible, otherwise regular “smooth” PB works! Solstice Canyon makes a great “thin” PB. Hope that helps! xx
