Inulin Muffin Recipe

Ingredients
  • 6 tbsp inulin
  • 3 eggs
  • 6 tbsp raw tahini
  • 2½ tbsp fiber syrup
  • 1½ tbsp baking powder
  • ½ tbsp pink Himalayan sea salt
  • ½ tbsp EBTB seasoning
  • for the butter:
  • 2 tbsp unsalted butter, room temperature
  • 6 strawberries strawberries, stems removed
  • drizzle of fiber syrup (about 1 tsp), optional
  • drizzle of lemon, optional
Instructions
  1. Preheat oven to 400F.
  2. In mixing bowl, combine inulin, eggs, tahini, syrup, baking powder, salt & EBTB seasoning. Stir until combined.
  3. Spray muffin tin with avocado oil spray & pour batter into each muffin cup until ½ full.
  4. Sprinkle a pinch more of EBTB seasoning on top of muffins. Bake for 12 minutes.
  5. While the muffins are cooking, pour melted butter over strawberries on a plate. Using the back of a fork, smash the berries until they become a somewhat pureed mixture with the butter.
  6. Remove muffins when done & top with strawberry butter if desired. Serve & enjoy!
