These dairy-free bran muffins have been on repeat the last few weeks partially because they’re just so easy to make, partially because they’re delicious & partially because they’re easy to have as breakfast or a snack for the week. They’re made with bran cereal that gets soaked in almond milk which makes for the absolute best texture in a muffin. They’re (sorry in advance for using the word everyone hates…) super moist & the most perfect flavor!

Ingredients
- 1 cup almond milk
- 1 cup all bran cereal
- 1 cup all-purpose flour
- pinch of salt
- ⅓ cup light brown sugar
- pinch of baking powder
- pinch of ground cinnamon
- pinch of nutmeg
- ⅓ cup applesauce
- ½ tsp vanilla extract
Instructions
- Preheat oven to 375F.
- Combine applesauce, vanilla & almond milk in large mixing bowl. Stir to combine.
- Stir in cereal & let sit for 5 minutes.
- Add in flour, salt, brown sugar, baking soda, cinnamon & nutmeg. Stir to combine.
- Line muffin tray or spray muffin tray with baking spray. Pour batter evenly into 9-12 muffin spaces. Bake for 20 minutes. Let cool, serve & enjoy!

Could I use coconut oil in place of apple sauce?
Hi Vera! You can literally take a pinch of each in between your fingers and that will do! Typically it’s around 1/16 tsp if that helps! Unfortunately I wouldn’t recommend oil substituted for applesauce as the applesauce helps to bind and act as a sugar. The oil will likely make them too runny. Hope you enjoy!
