The Ultimate Summer Salad Recipe

Happy Memorial Day, friends! I hope you all are enjoying some beautiful weather & the day off. I’m kicking off this holiday weekend with one of my favorite healthy recipes that I’ve prepped for a party I’m going to later today. It’s basically a GIANT salad of all the best ingredients: fresh fruit, crispy Fresh Express Salad, creamy Pear & Gorgonzola dressing from Litehouse Foods, & NatureSweet Cherubs Tomatoes – my absolute favorite summer tomato. My birthday is later this week which means there is likely lots of cake in my future. Knowing that I’m attempting to start this week off with lots of healthy meals. Thankfully this salad is just as tasty as it is healthy so I can have a few of these this week plus my interview with nutritionist Kelly LeVeque is going live later this week so you know I’ll be sipping some of her smoothies throughout the week. If you’re looking for a super simple yet delicious meal for a Memorial Day celebration or just to finish off (ah!) the month of May the right way I highly suggest you make this salad. Ingredients

  • 1 bag Fresh Express Salads
  • 1 bottle Litehouse Foods Pear & Gorgonzola Dressing
  • 1 cup NatureSweet Cherubs Tomatoes,sliced
  • 1 peach
  • 1 pear
  • ½ cup blueberries

Instructions

  • In large bowl, toss all ingredients together with desired amount of dressing. Serve & enjoy!
