St. Pancake’s Day | Guinness Infused Green Pancake Recipe

Pancakes: one of the easier desserts to make. Guinness: one of the more difficult beers to drink. Together: one of the best things you’ve ever tasted. Seriously, these green Guinness-infused pancakes for St. Patrick’s Day are really all you need to start the holiday off right.

This recipe makes roughly eight pancakes and includes not quite a full cup of beer — though you can certainly taste it through the batter. The kick of the beer and sweetness from the batter results in an awesome combination. (This coming from a girl who would rather drink a virgin Pina Colada than the real deal.) The best part about this recipe is that you can swap out the Guinness for any other drink you may like instead, be it another type of beer, some margarita mix, or Baileys Irish Cream if you want something more potent.

Needless to say, this recipe is the perfect way to start off your morning before a St. Patrick’s Day parade… or to make life a tad more bearable if you’re stuck at work. After all, who needs Kegs & Eggs anymore when you have this two-in-one recipe? Seriously, the hardest part about this dish is picking all the marshmallows out of your box of Lucky Charms. (Well, trying not to eat all of the marshmallows before you’re able to top the pancakes might actually be the most difficult part.) All you have to do is combine the ingredients, plop a ladle full onto a skillet, and voila! You have St. Patrick’s Day pancakes! Just whip them up, top with ice cream and marshmallows, and serve. Yes, I realize this is starting to not sound like a breakfast dish anymore, but c’mon, it’s a holiday… treat yo’ self!

Guinness Infused Green Pancakes

Ingredients

  • for pancakes
  • 1½ cups all purpose flour
  • 1 tbsp baking powder
  • 2 tbsp granulated sugar
  • 2-4 drops food coloring
  • 1 egg
  • ¾ cups Guinness
  • ¾ cup milk
  • 3 tbsp unsalted butter, melted
  • for topping
  • 1 pint ice cream
  • Lucky Charm marshmallows, to taste (aka a ton)

Instructions

  • In large mixing bowl combine all pancake ingredients.
  • Lightly grease skillet & pour spoonful of batter into skillet over low-medium heat. Flip after 2-3 minutes.
  • Top with ice cream & marshmallows. Enjoy!
