It was time this banana bread cookie got a well-deserved blog post makeover. We originally published this in 2015 which just goes to show how many years we’ve been making & enjoying these super simple & delicious cookies. It’s gluten-free (if you use GF oats), vegan (if you opt out of chocolate chips or use vegan chips), & SO. FREAKING. GOOD. Plus it only takes 15 minutes to make & that includes prep AND baking time.

Serves: 10 cookies
Ingredients
- 2 ripe bananas
- ¾ cup rolled oats
- 2 tbsp coconut flour
- OPTIONAL:
- chocolate chips
- almond slivers
- coconut flakes
Instructions
- Preheat oven to 350F.
- In large mixing bowl mash bananas with the back of a fork. Add in all other ingredients, stir to combine & then ship into cookies.
- Line baking sheet with parchment paper. Bake cookies for 10-14 minutes. Serve & enjoy (best served straight out of the oven)!

Are the almonds necessary to the recipe? I’m allergic to nuts, gluten intolerant, and suddenly developed a peanut allergy at 23 🙁 This is the most minimal, healthy, peanut free recipe I have found yet! I’m just wondering if the almonds are vital to the recipe or if I can just leave them out.
Hi Livi! Nope, the almonds are not necessary at all! In fact, you can totally leave them out or substitute them for something else you enjoy (i.e. carob chips, chopped freeze dried fruit, etc.). Enjoy!! xo
