The second month of the year is already here & we’re really trying to keep those New Year’s Resolutions going strong. We’ll admit, some are a bit easier to keep (i.e. our bodies no longer crave some of the processed foods we ate before now that we’ve gone a month without them) while others are getting harder (i.e. maybe if it wasn’t so stinkin’ cold all the time we wouldn’t dread the gym!) but this one recipe has been sort of our saving grace when it comes to snacking.
Obviously we all know that “an apple a day keeps the doctor away” but this delicious recipe will make you want about 10 apples a day. Thankfully this snack is super easy to make & it doubles as the perfect dessert. With just one apple, some almond butter, a homemade chocolate ganache (that’s surprisingly delicious & not bad for you), & some carob chips, you can create this sweet treat in under 5 minutes. The recipe for the entire dish including the chocolate ganache is below & while you totally can use homemade almond butter, for this recipe we used this one that we absolutely love (plus it’s thinner than most so it’s great for drizzling)!
Healthy Apple Nachos Recipe
Ingredients
- 1 granny smith apple
- 1 tbsp almond butter
- 1 tsp unsweetened cocoa powder (or cacao powder)
- ½ tsp coconut oil
- carob chips
Instructions
- Slice apple into thin pieces & place onto plate in circular layers. Drizzle almond butter over the apples.
- In small microwavable mixing bowl, melt the coconut oil in 10 second intervals until melted. Stir in the cocoa powder & drizzle mixture over apples. Top with carob chips, serve, & enjoy!
