Essentially this recipe is everything you could want in a cookie: crispy edges that melt in your mouth, a gooey center filled with melted caramel, & loads of chocolate all throughout. We did however use a secret ingredient to get this caramel chocolate chip cookie to taste just right. Curious what it is? Ok fiiine, we’ll share…CASHEWS! Yup, that little nut gets ground up to give these cookies a texture you’ll completely fall in love with. When cashews are ground they form a texture similar to that of flour yet still holding their creamy flavor. Add that into a cookie & you’ll be surprised at how perfect they turn out. If you prefer your dough to have bits & pieces of them throughout we suggest just grinding them a bit gentler & for a shorter amount of time. If you’d like it fine, as we did, just throw ’em into a food processor & grind them up until they’re smooth & have a flour like consistency. It takes less than a minute & is super easy.
Aside from their delicious texture, these cookies are loaded with flavor. Let’s be honest, anything with caramel & chocolate in it that comes in the form of a cookie is pretty much guaranteed to be amazing, right? Well, at least these are! They’re best enjoyed after just a few minutes of cooling as the caramel is still ooey & gooey. However if you’re trying not to devour them all in one sitting (good luck with that…) feel free to keep them in an airtight container & microwave ’em for about 10 seconds before enjoying later on.
Gooey Caramel Chocolate Chip Cookie Recipe + A Secret Ingredient!
Ingredients
- 1 cup & 1 tsp all purpose flour
- ⅓ cup brown sugar
- ⅓ cup granulated sugar
- 1 stick butter
- 2 eggs
- ¾ cup mini chocolate chips
- 1 tsp vanilla extract
- ½ tsp salt
- ½ tsp baking powder
- ½ tsp baking soda
- ⅓ cup cashews, ground
- ½ tsp baking soda
- caramel candies
Instructions
- In large mixing bowl combine the sugars & flour. Add in the butter, eggs, vanilla, baking powder, baking soda, cashews, & salt until all ingredients are combined. Stir in the chocolate chips & place bowl in the fridge for 1 hour. After one hour, remove dough from fridge & scoop dough onto a parchment paper lined baking tray about 3 inches apart. Place a caramel candy in the middle of each dough ball, roll them to cover the candy, & place onto the tray. Place the tray in the freezer for 45 minutes.
- Preheat oven to 375F & bake cookies for 12-15 minutes. Serve & enjoy!
