During our interview, Lauryn explained the benefits of raw tahini & ever since, we’ve been trying to include it in more recipes we create. It’s what led us to create this better-for-you tahini pad Thai recipe that has been on repeat since we developed it. It takes only 5 minutes to make, thanks to the most delicious & authentic noodles from Lotus Foods, & the ingredients, including those noodles, are all better-for-you alternatives. We used coconut sugar instead of brown sugar, coconut aminos instead of soy sauce, raw tahini as a great source of healthy fats (aka it will keep you full longer), & Lotus Foods organic traditional pad thai rice noodles that are gluten-free & 100% whole grain. - 1 package Lotus Foods Pad Thai noodles
- 1½ tbsp fish sauce
- 2 tbsp coconut sugar
- 3 tsp coconut aminos
- 2 tbsp raw tahini
- 2 tsp rice vinegar
- 1 lime, juiced
- 2 tbsp ketchup
- 1 tbsp water
- Cook noodles according to package instructions. While cooking, combine all sauce ingredients in bowl & stir until blended.
- Drain noodles when done & top with sauce. Serve & enjoy!
