It’s officially sweater weather which in the past we took as an excuse to indulge in all of our favorite sweets & treats however this year, we’re determined to stay on track with staying healthy at least 80% of the time. This recipe for chocolate protein muffins surprisingly allows us to do just that without sacrificing any of the taste. These chocolate protein muffins are totally gluten-free, dairy-free (if you use cacao or 100% cocoa – same with the chocolate chips) & refined sugar free. They’re loaded with protein too which will help you stay full throughout the day making them an ideal breakfast or snack option. The best part about them though is that they are a dump & mix kind of recipe which by now we’re sure you know we loooove. That means, you just dump all the ingredients into a bowl, mix it together & put it into the muffin tray – nothing hard, nothing fancy. Just good, delicious, chocolatey muffins that are shockingly good for you.

Serves: 6 muffins
Ingredients
  • 3 eggs
  • ⅔ cup chocolate protein
  • 1 tsp chia seeds
  • ⅓ cup cocoa powder
  • ½ tsp baking soda
  • 2 tbsp full fat coconut cream
  • ½ cup chocolate chips
  • sea salt, for topping
Instructions
  1. In large mixing bowl, combine all ingredients except the salt. Stir to combine.
  2. Spray muffin pan with baking spray & scoop even amount of batter into each muffin cup until ¾ of the way full.
  3. Bake at 350F for 12 minutes, remove from oven & immediately top each with a pinch of sea salt. Serve & enjoy!
