This spicy cashew cream sauce recipe, served over noodles, is the most cozy dish yet surprisingly healthy! The cream base comes from cashew butter which might sound like a strange option but if you think about the fact that most vegan sauces include cashews it makes total sense! Opting for a cashew butter over cashews themselves allows for a much creamier and smooth base. The other ingredients add tons of flavor such as the nutritional yeast adding a cheesiness, red Thai curry paste adding the warmth to the dish, hot sauce adding a bit of heat and so much more.
This spicy cashew cream sauce recipe would also be delicious served over chicken, veggies or most other entrees that need a sauce. I’m planning to make roasted cauliflower in the next few days and will add this sauce on top!
Spicy Cashew Cream Sauce Recipe
Ingredients
- ½ cup coconut milk, shaken
- ⅓ cup cashew butter
- 1 tbsp red Thai curry paste
- 1 garlic clove
- 1 tbsp honey (can use maple syrup or any other sweetener to keep it vegan!)
- 2 tbsp coconut aminos
- 1 tbsp sesame oil
- 1 tsp nutritional yeast
- 1 tsp hot sauce
- pinch of salt
- 1 package pad thai noodles
Instructions
- Combine all sauce ingredients in blender and blend until smooth. Cook noodles according to package instructions. Pour sauce over noodles. Serve and enjoy!
