It’s that time of the year again people. That time that happens about once every two month. That time that I decide it’s time to eat healthy. That time that lasts exactly one recipe until I’m back to donuts & pop-tarts.
This time I’ve come up with homemade cucumber sushi. My mom & I were looking for something healthy yet tasty & satisfying. After a few modifications we’ve created the perfect summer meal for you to try! Best part? It really tastes exactly like sushi! Coming from a carboholic, I didn’t even miss the rice at all!
1 cucumber makes roughly 4 pieces of sushi
Cucumber Sushi Recipe

Ingredients
- for sushi:
- 1 large cucumber
- ¼ cup shredded crab, lobster, or any type of meat you'd like!
- ½ avocado, sliced thin
- 1 tbsp capers
- 2 tbsp shredded carrots
- for topping:
- spicy mayo
- pickled ginger
Instructions
- Peel cucumber. Cut into ½ inch thick chunks.
- Core the cucumber leaving the slightest bit of seeds at the bottom to keep your fillings in place.
- Fill cucumber bites with desired fillings: seafood/meat, vegetable, etc. (*some great combinations were: crab, avocado, carrot, topped with spicy mayo & ginger; lobster, crab, & avocado; shrimp, avocado, capers, topped with ginger; lobster & shrimp topped with ginger) Top with desired toppings.
