What’s even better is this mint chocolate chip banana ice cream takes only a few minutes to make & can be done in one step. Similar to our berry banana ice cream recipe this amazing creation is made with frozen bananas that are blended to result in a similar texture to regular ice cream. However it’s WAY better for you & is a total guilt-free dessert option.
We totally get it, you’re confused beyond belief at this point. No, we’re not lying to you. Yes, this actually is a good for you ice cream recipe. The recipe can be made with regular chocolate chips & chocolate sauce drizzled on top but since we were going the healthy route we figured why not go all out. Instead of chocolate chips we opted for carob chips which taste basically the same but are a vegan alternative. As for the chocolate sauce, we used our famous homemade “Magic Shell” creation that is also totally vegan. By combining 2 tbsp melted coconut oil with 3 tbsp unsweetened cocoa powder you’ll get what becomes a chocolate sauce. Once you pour that chocolate sauce on anything cold it instantly becomes a solid, much like the “Magic Shell” we ate growing up, except much healthier. While adding this to your ice cream is totally optional it is highly recommended. FYI it also tastes SO good on top of our healthy hot chocolate smoothie in case you’re looking for another sweet treat!
