A few weeks ago I asked on IG stories what new mini pop-tart flavor would you guys like to see on the site. The results were incredible & basically I need every single one of you to join my team. You cool with that? Great! People suggested everything from cotton candy to cereal, s’mores to cookie dough & that last one just totally stuck with me. Two days later, after non-stop dreaming of it, I created it & today I get to share that recipe with y’all! This is easily one of my favorite recipes on the site as it checks every box I want in a recipe: easy to make, delicious, aesthetically pleasing, & fun! Pop a few in a bag for a snack or enjoy ’em over a bowl of homemade edible cookie dough, either way you will NOT regret making these!

Cookie Dough Mini Pop-Tarts

Cookie Dough Stuffed Mini Pop-Tarts Recipe
Recipe type: Dessert
  • for the cookie dough:
  • ⅓ cup light brown sugar
  • ¼ cup granulated sugar
  • 3 tsp milk
  • 2 tsp pure vanilla extract
  • a pinch of salt
  • ¾ cup mini chocolate chips
  • 1 cup all-purpose flour
  • 1 stick of unsalted butter, softened
  • for the pop-tarts:
  • 2¼ cup flour
  • ¼ cup granulated sugar
  • 2 egg yolks
  • 1 cup butter
  • pinch of salt
  • water
  • for icing:
  • ½ cup ps
  • 3 tsp vanilla
  • 1 tsp almond milk
  • for toppings:
  • chocolate chip cookie crumbs
  1. Line large baking sheet with parchment paper.
  2. In food processor, combine flour, sugar, butter, & salt. Pour mixture into large mixing bowl & add in one egg yolk. Knead with your hands until smooth.
  3. Let sit in refrigerator for 1.5 hours.
  4. Preheat oven to 360 F. Mix in extra egg yolk to dough. Add water in increments of 1 tablespoon as needed to help dough stick together. Place dough on large cutting board & roll out until about 1.5 cm in height.
  5. Cut dough into even number of tiny rectangles. Place half of the rectangles on parchment paper & place 1 tsp of cookie dough directly in center of dough.
  6. Lightly brush the edges of filled dough with water. Place evenly sized dough on top of filled dough & press down on sides to close. Press the edges of the dough with a fork to secure rectangles together.
  7. Bake for 20-30 minutes until golden brown. Let cool & begin making icing by combining all ingredients at once in bowl. Combine all glaze ingredients & top immediately.
