cookie dough ice cream sandwiches
Ingredients
- ⅓ cup brown sugar
- ¼ cup granulated sugar
- 2 tablespoons of milk
- 1 teaspoon pure vanilla extract
- ¼ teaspoon salt
- 1 cup all-purpose flour
- ¾ cup mini chocolate chips
- 1 stick of unsalted butter, softened
- 1 quart of cookie dough ice cream, softened
Instructions
- mix brown sugar, granulated sugar, milk, vanilla, salt, butter & chocolate chips in mixing bowl or with electronic mixer until completely mixed
- spray 8x8 baking pan with cooking spray
- place half of the mixed cookie dough into the baking pan & flatten until the pan is fully covered with an even layer of dough
- spread desired amount of cookie dough ice cream evenly over the flattened cookie dough
- smooth ice cream out evenly using the bottom of a large spoon
- line the second 8x8 baking pan with parchment paper & spray with cooking spray leaving the excess parchment paper over the sides
- place the other half of the cookie dough in the second tray and flatten until the pan is fully covered with an even layer of dough
- lift up the excess parchment paper up and flip over top of the ice cream in the first 8x8 pan
- gently press your hands down upon the top layer of cookie dough
- cover pan with parchment paper & freeze for 3-4 hours or until firm
- cut frozen ice cream cookie dough into desirable size sandwiches
